How do I fix tortillas that keep cracking or turning out too dry?

We’ve all been there: you roll out the dough, get excited to make some fresh tortillas, and then—boom! They crack or turn out as dry as the desert. What went wrong? Don't worry! We've got you covered with some simple tips to get those tortillas soft and perfect every time.

Why Do Tortillas Crack or Get Dry?

First, let’s figure out why your tortillas might be misbehaving. Cracks and dryness can happen for a few reasons. Maybe your dough is too dry to begin with, or you’re cooking them at too high of a heat. The good news is, these are easy fixes!

1. Add More Moisture to Your Dough

If your tortillas are cracking, it could be a sign that your dough is too dry. This happens if you didn’t add enough water or if it’s been sitting out for too long. To fix this, add a little more water or a splash of oil to the dough to keep it soft and pliable.

2. Rest Your Dough

Resting your dough is essential. After you mix the ingredients, give it a little nap! Let the dough sit for at least 30 minutes. This allows the gluten to relax and makes it easier to roll out without cracking. It’s like giving your dough a spa day!

3. Cook on Medium Heat

Cooking your tortillas on high heat can dry them out and make them crack. Instead, cook them on medium heat. This gives them enough time to cook through without drying out. Think of it like the “Goldilocks” method—not too hot, not too cold, just right!

4. Use a Damp Cloth

After cooking your tortillas, wrap them in a damp cloth to keep them warm and moist. This trick helps maintain their softness so they don’t dry out while you’re cooking the rest. Think of it like a cozy blanket for your tortillas!

5. Don’t Overcook

It’s easy to get distracted and leave your tortillas on the griddle too long, but overcooking is a recipe for dry, cracked tortillas. Once you see little bubbles forming on the surface, it’s time to flip and cook the other side for just a little bit longer. Less is more when it comes to tortilla cooking!

6. Consider Your Flour

Not all flours are created equal! If your tortillas keep turning out dry, consider trying a different type of flour. Some brands of masa harina have a finer texture, which can lead to softer, fluffier tortillas. Choose a high-quality flour for the best results.

By following these simple tips, your tortillas will be soft, flexible, and ready to be the star of your next meal. Say goodbye to cracking and dryness and hello to perfect tortillas every time!
